One of the delights of a holiday in Greece is to sample the Greek Cuisine. Stoupa boasts Tavernas that serve food of a very high standard. The two main providers of income are Tourism and olives, and olive oil production.
           

This region is famous for its olives which are exported around the world. Some of the finest olive oil is produced here and accompanies salads, as well as for cooking purposes. Here is a small selection of some Greek delights that await your palette.

No Greek meal can commence without an appetiser:
TZAZIKI: A mixture of yoghurt, cucumber, and garlic. Delicious with local bread or as an accompaniment to freshly cooked beetroot.
STUFFED VINE LEAVES: Stuffed with a mixture of chopped onions, spring onions, dill, rice, mint, with salt and pepper, and the juice of lemons added.
CHEESE PIES: Bite size portions of filo pastry stuffed with cheese.
SPINACH PIES: Bite size portions of filo pastry stuffed with spinach.
FRIED COURGETTES: Sliced thinly, coated with batter, and cooked quickly in hot oil. Served hot. Garnish with salt, delicious!
SKORDALIA; A garlic sauce that accompanies Horta. Also delicious with fried courgettes.
HORTA: A delicious green vegetable similar to spinach.
AUBERGINE SALAD: A paste mixture of aubergines, onion, parsley, lemon and oil. Superb with sliced tomatoes.
FRIED AUBERGINES: Sliced thinly, coated in batter, fried quickly in oil, served hot. Garnish with salt.
These are a small selection of appetisers that may be new to you. It is very pleasant to while away a couple of hours in a taverna at lunchtime and order a Meze, which is a selection of appetisers. Maybe accompanied with a glass of wine, and one of the many fresh salads on offer.

Some main courses that may be new to you:
STIFADO: Veal or Beef casserole with small onions.
SOUVLAKI: Usually chicken or pork slices on a skewer.
KLEFTIKO: Lamb cooked in paper.
STUFFED TOMATO: A large tomato stuffed with mincemeat. Usually two are served, or you can have one tomato and one stuffed pepper.
BRIAM: A selection of vegetables cooked in the oven.
Fresh fish is another delicacy high on Greek people’s food requirements. Some varieties found in Stoupa are: Red Mullet, Octopus, Squid, Sea Bream, Whitebait, Shrimps (Prawns), and Swordfish.
